If you are looking for a great book on processing your own livestock and wild game, this is the book for you. This book covers just about everything you need to know about processing your own meat, including the equipment you will need, food safety and cleanliness, step-by-step processing instructions for: beef, bison and veal sheep, lambs and goats pork poultry and other fowl venison, moose, elk and big game rabbits and other small game fish There are chapters dedicated to each animal category, and the pictures are amazingly well done. There are also sections on meat curing and smoking, sausages, building a butchery business, and recipes throughout the book. The primary focus, however, is on the actual butchering process. The supplementary chapters on topics such as smoking and the business aspects are good, but more of an overview. I recommend the addition of this book to your library if you want a good grasp of the art of processing your own animals and game, and you will definitely appreciate the illustrations and detailed photos.
